Hi, would it ever be possible to run 2 motors from pediglide hub motor trucks, with one VESC esc? I've seen this before but does it affect anything and would it work properly?

you need one ESC per motor... Dual VESC can talk over the can bus and do fancy stuff like traction control, otherwise a simple "Y" splitter cable from RX.

Never of with brushless, as the speed controller determines the motor rotation. Each brushless motor needs its own separate controller. It's fine for the outdated brushed motors, as these run on constant dc voltage and manage themselves.

Where have you seen it before? It does not work with brushless DC motors.

A brushed motor has a "commutator" that rotates the brushes against the points and turns the windings on and off. A brushless motor has a controller that senses the rotation from the back-emf and turns the windings on and off. One controller could not drive two motors because they would not be in the same position.
Edit: I misread what 777 said: he's saying it doesn't work not asking why it wouldn't work.
